I have used a few different brands and they are ok, but looking for a high end / quality knife that maintains a good edge. I use it from crappies to ling cod.

My Cutco broke right inside the handle. Weird.
A Gerber broke right at blade just above the handle.
A Rapala folding fillet rusted beyond repair.
Three brands that have been good for me are one by CRKT called the "Big Eddy," one by Schrade with a bone handle, and anything by Dexter-Russell.

I have several fillet knives from various brands - they all work fine. My most high-end / quality knife is by japanese brand MAC. The 16 cm versions comes with sheath (in Denmark at least) but there are other versions if you prefer a longer knife. See for example

The MAC knives are more for indoor/kitchen use at least for me.

The Wusthof fillet knives are supposed to be the cream of the crop.

I really like the custom Dexter-Russell fillet knife that American Legacy sells. I have had mine 8 or 9 years and filleted more than a ton of fish with it. I think they have it on sale for 40 bucks right now.

I bought the Rapala fish n fillet knife last year and have used it ever since. You will NOT be disappointed with this knife.
Also, the sheath looks amazing as well. Highly recommend it.
